Ingredients
- 1 Cup Granulated Sugar
- 2 Cups All Purpose Flower
- 2 eggs
- 1 stick (½ cup) Butter
- 3 ripe bananas, peeled
- 1 Tsp Baking Soda
- ½ Tsp Salt
- ½ Tsp Vanilla
- ¼ Cup chopped pecans
- 1 Tablespoons of light brown sugar
- ½ Tsp Cinnamon
Instructions
In a large mixing bowl melt the stick of butter in the microwave (usually 45-90 seconds on high). Add the eggs and sugar. Then break apart the bananas and add them to the bowl. Next, add the flower, baking soda, salt and cinnamon. Then mix with a mixer until the dry ingredients are blended with the wet ingredients. At this time, add the 1 tsp of vanilla and mix with the electric mixer on medium speed until there are no longer large banana pieces (there will be small clups of banana which is fine). Then spray some non-stick spray in a glass loaf baking dish and pour the batter from the bowl into the dish. Sprinkle the brown sugar on top of the batter and then add the pecans on top. Bake at 350 degrees for 1 hour. After an hour turn off the oven but leave the bread inside for 20 minutes. I have found that allows the center to finish cooking without drying. Check to make sure the bread is cooked in the center before removing by inserting a sharp knife. If the knife comes out clean, then your bread is done… enjoy. I hope you enjoy this!
If the knife does not come out clean, then you will need to bake it a bit longer. If you use a metal loaf pan or a non-standard loaf pan/dish, then you will likely need to adjust the baking time up or down. The first time you make this just check on it the second half of the baking time every 10 minutes.
